my crave for blackened catfish
blackened catfish. pan fried catfish with crushed black pepper, lime juice and virgin olive oil.
blackened catfish filets
4 catfish filets. boneless and skinless
one quarter cup cajun spice blend
2 tablespoons extra virgin olive oil
4 tablespoons melted butter
1. pre-heat oven to 400 degrees fahrenheit
2. heat a large fry pan over high heat about 10-15 minutes
3. brush filets on both sides with oil. sprinkle cajun seasoning generously
4. place into heated pan and pour melted butter directly over filets for
2-3 minutes until blackened
5. place pan into pre-heated oven and roast for 5 minutes
serve with creole rice
